Spur of the moment meal... voted a favorite




Not exactly a photo out of BH&G but let's get real. Who has time for that?
So, yes it's been a crazy week but a good crazy:) and trying to drum up something quick for lunch, I threw this together, our first time ever having it, I was worried how it would go over but let's just say ..... Them eggs went "over easy".  Ha! Hubby and kids asked me to blog it for our own records. 

Tater Tot Brunch

Ingredients: 
-Scrambled eggs (10)
- 1 cup of shredded cheddar cheese 
- Tater tots (enough to layer across pan)

( please..... do the right thing .....add meat.  I had none or I would have but make us proud Americans, add meat<unless thats against your religion>Thank you) 

Instructions:
Preheat oven to 350. Scramble desired amount of eggs ( season afterwards, salting eggs during cooking pulls the water out of  your eggs making them watery)  Get a pan.
I used a 9x9 but next time (for a family of six) I will do a bit more of everything and use a 9x13.
So, anyway spray your pan, ( I lined my pan with foil and had zero clean up) layer scrambled eggs, cheese, ( right here goes the meat) and frozen tots and throw it in the oven for 25-30 at 350.
 Easy, simple, fast, am I talking your language?
