I'm actually going to talk about healthy food (how's that for goin upstream :) ha! ha! We were blessed with a ginormous amount of cucumbers this month from one of our church family's garden but we know ZERO about canning and all that (well... freezer jam but I don't think that counts ) anyway, even though we are not canners we are still making good use of them! There is so many other uses and here's a few ideas beyond the obvious salad topping that we love.
Cucumber water is soooooo good for you, it aids digestion, promotes beautiful skin and hair, helps with joint health and arthritis and so much more. I cut mine thicker for the pitcher because I find they stay fresh longer that way and I don't have to dig pulp or seeds out of the spout.
Ham and le'cheese h'orderves -
Just kidding :) You know I wouldn't do that to you:) All this appetizer has going on is; laughing cow cheese spread on the bottom, topped with ham, topped with a cheddar cheese lattice that I made in the skillet ( because I just like things cutsie sometimes :) but it's good with just a piece of cheese straight off the block too. You can make like 10 in 5 minutes.
I mean, since when does ham and cheese not go together ?
Fridge pickles- you can find the recipe I used on the website, www.myrecipes.com. These keep in the fridge for a month. And for those with stomach troubles and digestion issues, a little health tip, fermented food is soo good for you ( Keifer, yogurt, etc....) I know fermented sounds bad but it's all about getting as much good bacteria in your digestive system as you can to combat the bad and that's found in your fermented food and Keifer and stuff like that.
Anyway.... Where was I? Fridge pickles! And it's ok, the water that will come from the cumcumbers will cover everything eventually, see you don't open the jars for four days and then they are ready to eat.
Anti- puffing eye pads- (not pictured....because we have used all of ours and I'm in the process of making more, maybe I'll post it tomorrow ) but you blend the cucumbers in a little water in a blender. Dip round cotton pads in the mixture and then freeze in a ziploc bag, these work wonders! You just pull them out as needed and rest them on your eyes for a few minutes and voila !! And that's it for now.
