this is our family recipe book featuring our fav's....
BAKED TILAPIA
...it makes my eyes happy.
( and when this dish of fish ( say that ten times real fast) is baked ... mouths will be happy as well) |
You will need:
A bag of greens of your choice, salt and peppered up
6 Tilapia Filets
1 Lemon
Todd's Dirt seasoning (or your favorite fish seasoning)
Old Bay
salt and pepper
drizzle some oil and squeezed lemon over fish last.
O.K CLASS
(just kidding I just like saying that)
Directions:
My kids will eat any kind of fish this way. It's so easy.
Pre-heat oven to 350.
Spray your pan, layer your greens ( just make sure they are ones that cook down quick)
I used spinach but don't be afraid!!! Kids love it, it's really not slimy at all and super healthy,
your just blanching them sort of. Then layer your rinsed fish in a plate of seasoning (to taste)
and then just sprinkle the top side too (to taste) with the seasoning of both sides happening quickly here.
Then place your fish on top of seasoned greens. O.k. now that something smells fishy ;) ( or John says corny)
Slice your lemon THINLY!! I made the mistake once of too thick and the underlying fish under the lemon slice was not fully cooked so thicker is not better... in such a case :)
Also rub a slice over your hands and it will wipe out that smell for ya.
Place a thin lemon slice over each fish filet, did I mention thin?
O.k then squeeze the rest of the lemon over the fishies and
drizzle that "good for your heart" olive oil over fish.
And you're done.
Into your pre-heated oven they go at 350 and 12-15 minutes should do it
or until they flake easily with fork...."OR UNTIL" is important.

Makes 4 parfait glasses or six small glasses like the one Sara is holding here.
You will need:
14 Mint Oreo's
1 big box of chocolate pudding prepared (instant)
1/2 a Cool Whip Container
Directions:
Prepare pudding according to package.
Pour pudding into desired cups, parfait glasses or whatever your fancy.
Put cookies in a gallon ziploc bag and pound with rolling pin.
Reserve half of the cookies for later and the remaining cookies fold into the cool whip.
Now top the pudding with the whip and then sprinkle the remaining cookies on top.
Let set in fridge for an hour and there you go, a different kind of mud-boggin' :)
Homemade Bread
So my husband John is half Italian and all you Italians understand he NEEDS not wants.... NEEDS bread with every thing he eats. Now with finances the way they are, he eats what is there and is thankful but in a perfect world he MUST have bread. I could have a rib-eye steak, a potato and a salad on the plate but no bread and he'll say, "Where's the bread?" I'm like, "Hey, ..."man cannot live by bread alone!" But he doesn't care, hey, if it's a hamburger bun, hot dog bun, whatever, he will butter it up and eat it along with anything. But here's the bright side, I can make a simple soup or a nice salad and serve it with a good slice of bread like this for supper and he's a happy man. I love this recipe because you are in and out of the kitchen in one hour with fresh bread! It's a family pleaser and smells wonderful all through the house. I think it costs around 30 cents a loaf and is a nice retreat from the shelf stuff. It's so easy that Sara, my 9 year old, makes it up and we shape the loaves together.This is a very simple bread but yummy enough to eat alone or serve along side a more humble meal and still get those kisses!
Easy Peasy...... Homemade Bread
(makes 2 loves I mean....loaves)
You will need:
5 and 1/2 cups of bread flour
1/2 a tblsp. of salt
1 and 1/2 tblsp. of instant yeast
1/2 cup of sugar
2 cups of warm water
1 and 1/2 tblsp. of oil
Directions:
Preheat oven to 350 degrees:
So, first we mix the dry ingredients together real good because the yeast and salt need to get to know each other a little bit.Then make a well in the center and add your wet ingredients slowly. Add the water first, I like to add the water 1 cup at a time to really let the yeast have time to do it's thing. O.k. now add the oil. Mix about a 60 seconds, scrape dough out of bowl and onto a oiled surface ( I spray my working area with Pam or something, I don't recommend flouring your surface because you don't want to keep adding flour in to the dough). So we want our dough ball sticky but not unmanageable. If you find it's too wet, add a tiny bit more flour, if it's too dry add a little more water. You want a nice smooth ball of dough.
Smooth.....think smooth.
Alright, when you get that nice ball, with a knife (I guess that was obvious) cut the ball in half.
Starting with one of the halves, roll it out into a long log then fold the log and roll it out into a long log again and do this once again and thanks to "Mrs. Yeast" that's all the kneading this super easy dough needs! Now we can start shaping our dough into a loaf shape like this.... pull from the top and tuck under, pull and tuck under, we are smoothing out the top of the loaf and shaping the dough. Like you used to, when you played with play dough...oh come on you remember!!! Alright, so get that nice loaf shape and put it on the well-sprayed baking sheet and do this same routine to the other half of the dough and put that dough on a well-sprayed baking sheet if you have a real wide one that's even better you can put them both on there.
Now, leave them to rise for @ 25mn. in a warm area of your kitchen, I leave mine right by the oven that's preheating and that always works for me. I will crack the door on the oven just a bit.
When they have a risen a good bit, cut three slits in the top to the bread but be careful not to go down too deep with your slit about half way is good. Then place on a greased baking sheet (if you haven't done this already) and place in a preheated oven, 350 for 25mn.
When the time is up, take it out, tap on the bread, if you hear a hollow sound you know they are done. (I can relate, that's how you know I'm done after a long day too :) anyway, let it cool, this is important because you don't want the bread falling apart to where you can't cut it.
And here you are, just a simple bread, spread with a little butter or your favorite jam and life is good!

A California Breakfast
passed down from my great great great really great Mother :)
You Will Need:
16 oz. salsa (use your favorite)
12-15 corn tortillas (I like yellow more authentic corn tortillas better, I like a little tan what can I say :)
8 eggs scrambled (I can relate)
1 1/2 cup of shredded mild cheddar cheese ( or sharp...depending on what side of the bed you woke up on)

Key Lime Pie
- You will need:
- 1 prepared 9-inch (6 oz.) graham cracker crust
- 1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
- 1/2 cup (about 3 medium limes) fresh lime juice
- 1 teaspoon grated lime peel
- 2 cups frozen whipped topping, thawed
- 2-3 drops green food coloring (optional)
- lime slices for garnish
Directions:
Mix sweetened condensed milk and lime juice together then stir in peel. Fold in whipped topping and spread in crust.
Refrigerate and let set for 2 hours.
